We present the dynamics of expanding anisotropic Bose-Einstein condensates initially in a double-minimum potential well. Analytical solutions for the transverse motion are combined with numerical solutions of the time-dependent Gross-Pitaevskii equation (GPE) to calculate curved interference patterns as observed in recent experiments. Such patterns are a signature of the non-separable time evolution of interacting atoms in the mean-field approximation.
